The Birmingham Bike Foundry sell refurbished bikes with a 3 month guarantee. They frequently have 3-speeds in but they're usually women's models.
Sprockets in Digbeth usually have several second hand bikes outside their shop but they're sold as seen.

The next edition of the Birmingham cycle map will list which shops do secondhand bikes (and bike hire)... a couple of months away.
